Every year in the Communidad Valencia there is a festival known as the "Fallas". There are various stories about the origin of the Fallas, though most suggest that it was an event celebrated by the Guild of Carpenters in Valencia, where on the night prior to the day of their Saint, Jose, they removed all the waste wood and wood shavings from their workshops and burned them on the eve of the Day of Saint Jose.
The celebrations are undertaken mainly in the province of Valencia, but some towns like Denia also celebrate it, so you have a choice to either go to the city of Valencia or to one of the smaller events, in Denia, Xativa, etc.
The festivals all start on the 01 March and end on the 19th of March, with the burning of the effigies in the streets. For the Spanish, one of the favourite events is the Mascaletas. In Valencia, the Mascaletas are nothing short of incredible and also ear-splitting, with thousands of people attending every year to hear and witness the Mascaletas

If you cannot get to Valencia city then why not visit Denia to see the Fallas locally, the agenda is as below
“Plantà”: this is when the Fallas effigies are all constructed in the various districts of Denia
“Mascletà”: Large numbers of fireworks are all set off in sequence at approximately 2:30 pm each day
“Pasacalles”: Each of the Falla will undertake a procession through the streets of Denia accompanied by the music of their Falla
“Floral Offering to the Virgen de los Desamparados” This is the time when you can see all the Falleros in their national costumes
“Cremà”: This is the final act, where the Fallas are burned, they do not burn at the same time, instead they are burned progressively. This permits the public to enjoy all the different Fallas
